Paso Robles is one of California's most pastoral domains. Its name roughly translates to passageway of oaks, and indeed majestic trees mark the landscape. Amongst the rolling hills and native habitat lie manicured vineyards, where ideal soil exists for farming Cabernet Sauvignon. Dry, warm conditions are typical, yet evenings are chilled by a breeze from the pacific just 18 miles to the west, allowing the fruit to ripen into luxurious, at nearly 1,000 feet, soils are elevated sea beds where shell fossils are often found. The decision to craft a reserve Austin Hope Cabernet Sauvignon comes with great care and consideration. Once we are nearing our final blending for the Austin Hope Cabernet Sauvignon, we select the best barrels from our best vineyards and put together the Austin Hope Reserve blend. Those barrels are blended together and put into brand new French oak barrels for extended aging until we feel the wine has reached its full potential.
